Sweet Potato Chips

What’s the secret to CRUNCHY sweet potato chips? More oil? Duck fat maybe? Well yes, that would be my usual approach, but in actual fact, it’s… cornflour. Cut the chips, then chuck them in a bag with salt and pepper and about a teaspoon of cornflour for a medium sweet potato. Shake shake shake then space out generously on a rack or tray (I use perforated metal pizza trays), drizzle with just a little olive oil and bake in a hot oven. They crisp up delightfully.
