They’re bizarre things, really. One of those foods where I can’t help but wonder who first thought, “they’re horrible now, but maybe if I boil them for six hours…”. Whoever it was, crazy genius. Quinces are amazing, spicy, firm, rich, heavenly really. After days of slow roasting, hanging, reducing and puree-ing, these three quinces yielded me a tray of quince paste and three jars of jelly, just perfect for spooning over pean puddings or rippling though vanilla icecream. Bring on winter…
